  • 2 medium tomato raw chopped
  • 1 small red onion finely diced
  • 3 stems spring onion finely chopped
  • 1 clove fresh raw garlic minced
  • 1⁄2 fresh chilli (optional) finely chopped
  • 3 tablespoon coriander chopped
  • 3 tablespoon fresh lime juice
  • In a mixing bowl, stir all ingredients together
  • Serve immediately or refrigerate in a tightly covered container for up to 3 days
