Ingredients
- 1 cup dry couscous
- 1 cup of boiling water
- 2 cup of chopped baby spinach leaves
- 1⁄4 cup of roasted pumpkin
- 1⁄4 cup roasted zucchini
- 6 Macadamia nuts, chopped
- DRESSING
- juice of 1/2 lime
- 2 teaspoon of balsamic vinegar
Preparation
- Stir boiling water into couscous, cover and allow to stand for 5 minutes.
- Stir vegetables and macadamias into couscous.
- Combine lime juice and vinegar for dressing and stir through couscous and vegetables.
