INGREDIENTS

  • 1 cup dry couscous
  • 1 cup of boiling water
  • 2 cup of chopped baby spinach leaves
  • 1⁄4 cup of roasted pumpkin
  • 1⁄4 cup roasted zucchini
  • 6 Macadamia nuts, chopped
  • DRESSING
  • juice of 1/2 lime
  • 2 teaspoon of balsamic vinegar

Preparation

  • Stir boiling water into couscous, cover and allow to stand for 5 minutes.
  • Stir vegetables and macadamias into couscous.
  • Combine lime juice and vinegar for dressing and stir through couscous and vegetables.
